Taco Chicken Salad Pitas

These are a little messy, but so tasty!

After a busy morning of running my daughter to cheer practice and tumbling, I wanted a lunch that was easy and didn’t require an extra trip to the grocery store. These Taco Chicken Salad Sandwiches were so easy to make. Is it even possible to go wrong when it comes to tacos??

2-3 celery stalks chopped (about 1/2c), 1 packet taco seasoning mix, 1 c. mayo

2 chicken breasts chopped into bite size pieces – rub in 1 tbsp taco seasoning mix before cooking
Combine all your ingredients, refrigerate for at least 1 hour.


You’ll Need:

  • 2 chicken breasts 
  • 1 cup of mayo
  • 1 packet taco seasoning mix (I love the salt-free kind for a more healthy lunch)
  • 2-3 celery stalks, chopped
  • pitas
  • Optional: cilantro, lettuce
  1. Chop your chicken breast into bite-sized pieces and season with 1 tbsp of taco seasoning mix
  2. Heat oil in large skillet and cook chicken thoroughly.
  3. Combine cooked chicken, 1 c. mayo, taco seasoning mix (I used about 3/4 of the full packet), and chopped celery. Mix until all combined. You could also add chopped cilantro (I didn’t have any on hand).
  4. Refrigerate for at least one hour 1 hour.
  5. Fill pitas with chicken taco salad goodness and enjoy! Feel free to add some lettuce in for extra crunch!
